How do I write a note for a past date?

On the note editing screen, tap the date and time at the top of the screen to change them. You can change the date and time of an existing note in the same way.

You can also tap a past date on the Calendar screen to select it and then tap the "+" button at the bottom right. The editing screen opens with that date already set.
