Open the menu (≡) at the top left of the Notes screen → "Settings" → "Notes Settings" and switch "Display Title" on or off. When it's off, the title field disappears from the editing screen and the first line of the note's body is shown in the list instead.
* Turning it off does not delete titles you have already entered. They appear again when you turn it back on.
